Breadfruit- – delicacies

Monsoon is the season of Breadfruit and monsoon is the reason to enjoy Breadfruit delicacies. Celebrating monsoon with the homegrown Breadfruit and homemade delicacies and there is nothing to beat its taste. We have few fruit yielding breadfruit trees in our natural farm and the fruit is featured in many healthy ways in our kitchen

Breadfruit( Artocarpus altilis) ) is a species of flowering tree in the mulberry and jackfruit family . It is called Deevi gujje or jeegujje in Kannada. The tree yields fruits twice in a year, in summer in the months of April and May and in monsoon season from july to mid week of September. The fruit is loved by everyone for its unique taste in our Coastal Karntaka region and those who live away from.home miss it like anything.

The fruit attracts all species of honeybees ,other pollinators and insects, butterflies, many species of birds, bats, squirrels and monkeys and whole season they too feast on these fruits.

Breadfruit tawa fry made using breadfruit, mixed flours like rice flour, arrowroot powder, gram flour , homemade powdered spices, salt and cooked on tawa using cold pressed coconut oil. If you have fresh or leftover dosa batter you can add to the above batter. Can be served as a snack or sidedish for lunch

Deep fried fritters made using breadfruit slices , gram flour, salt chilly powder, asafoetida and ajwan. Fresh cold pressed coconut oil is used for frying

100% farm to table delicacy – Sabji/palya is made using homegrown, homemade ingredients. Cold Pressed coconut oil used for seasoning, fresh ginger, black pepper powder, turmeric powder, green chillies and the main ingredient bread fruit are the produce of our natural farm Other ingredients used are red chilly, asafoetida, mustard seeds for seasoning, crushed garlic,salt and little homemade masala powder

You love experimenting with homegrown, natural food. Sometimes your craziness goes to the extent of preparing something without any preparations and your family welcomes it wholeheartedly WHAT MORE CAN ONE ASK FOR ? This picture does not make justice to the taste but this rice preparation turned out absolutely delicious and loved by everyone in my family. It is made using rice, sprouted grams, fresh homegrown whole spices, breadfruit, homemade desi cow’s ghee (A2)and enjoyed with homemade fresh curd(A2) and Lacucha(kette huli) sauce(courtesy Vasanthi k Samethadka)

Majjige huli/Kayi huli is the very popular curry of Brahmin community of our Mangalore region and is lived by all. It is made using bread fruit, fresh coconut gratings, buttermilk, green chillies and seasoning is made with fresh coconut oil, red chilly, mustard and curry leaves. Again for me this is also a 100% farm to table delicacy

Shallow fried cutlet is made using bread fruit, beaten rice/poha/avalakki, arrow root powder , onion, garlic, ginger, green chillies ,black pepper powder, curry leaves, fennel seeds and homemade masala powder, rawa for rolling the cutlets and fresh cold pressed coconut oil. I avoid using rusk and corn powder in my kitchen instead I use homemade arrow root powder and beaten rice for binding the mixture. 95% of the ingreduents used in this receipe are grown or produced in our farm.

Other than your regular curries there are so many healthy, simple ways ways to enjoy this humble, utritionally dense, nutrient rich and good for health fruit on a rainy day. Who can resist a bowl of homemade chips ? Cut it, peel it, slice it, cook/bake it,add black pepper powder/ masala powder, top it with thinly sliced onions, green chillies,corriander leaves and lemon juice.

Your spicy or masala breadfruit is ready.

Mash the cooked breadfruit pieces, add sliced onion, green chillies, salt, fresh curd, chopped corriander leaves and season it with asafoetida, red chilly and mustard. Your rayita is ready.

If you have surplus fruits, cut it, peel it, slice it, pressure cook it when cool store it in a airtight container and preserve it in your fridge. You can use it in the off season. Let your imagination flow freely and use this nature’s gift in a healthy way. Enjoy bread fruit and enjoy monsoon.
